Recipe: Jerk Turkey
Ingredients:
• 1 whole turkey (12-14 lbs)
• 4 tbsp jerk seasoning
• ¼ cup olive oil
• 2 garlic cloves, minced
• 1 onion, chopped
• 1 Scotch bonnet pepper, chopped
• 1 cup chicken broth
Instructions:
1. Mix jerk seasoning, olive oil, garlic, and Scotch bonnet to make a paste.
2. Rub the paste all over the turkey, including under the skin. Let marinate for at least 4 hours.
3. Roast turkey at 350°F for 3-4 hours, basting occasionally with broth.
